Creamy Red Pepper Hummus

Ingredients

  • One can chickpeas

  • Two red peppers

  • 2 tbsp olive oil

  • 1/4 cup tahini

  • 1/2 cup lemon juice

  • 1 garlic clove

  • 2 tbsp cumin

  • Salt to taste

Directions

  1. Chop & broil red peppers on high for about 10 minutes

  2. Mix tahini, lemon juice, oil, garlic, and spices in a blender or food processor

  3. Rinse chickpeas and slowly add to the mix and blend until smooth (you may need to add a bit of water)

  4. Once the peppers are roasted add them to the blender and blend until you get the consistency you want!

  5. Serve with chopped veggies, chips, or bread!
