Creamy Red Pepper Hummus
Ingredients
One can chickpeas
Two red peppers
2 tbsp olive oil
1/4 cup tahini
1/2 cup lemon juice
1 garlic clove
2 tbsp cumin
Salt to taste
Directions
Chop & broil red peppers on high for about 10 minutes
Mix tahini, lemon juice, oil, garlic, and spices in a blender or food processor
Rinse chickpeas and slowly add to the mix and blend until smooth (you may need to add a bit of water)
Once the peppers are roasted add them to the blender and blend until you get the consistency you want!
Serve with chopped veggies, chips, or bread!
